When life gets busy, simple meals can make healthy eating much easier.

This Slow Cooker Lemon Garlic Chicken with Green Beans and Potatoes is a great example of a meal that doesn't require a long list of ingredients or complicated prep. Everything cooks together in one slow cooker, giving you lean protein, vegetables, and a satisfying source of carbohydrates in one easy dish.

The fresh lemon and garlic dressing keeps the flavors bright and simple, while the slow cooker does most of the work for you.

This recipe is part of M³: Motivation • Movement • Meal Prep with Charlotte Blais of Blue Chip Maintenance, where practical meals are designed to make healthy choices easier to maintain throughout the week.

Why This Recipe Works

One of the biggest challenges with meal prep is finding recipes that are both simple and satisfying.

This recipe checks both boxes.

Chicken breast provides lean protein, green beans add vegetables and texture, and red potatoes help make the meal filling without requiring a separate side dish.

Because everything cooks together, cleanup is minimal too.

That makes this a great option for busy weeknights, weekend meal prep, or days when you want dinner ready without spending much time in the kitchen.

Slow Cooker Lemon Garlic Chicken, Green Beans & Potatoes

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • ½ lb fresh green beans, trimmed, about 2½ cups
  • 1¼ lbs red potatoes, diced, about 4 cups

Lemon Garlic Dressing

  • ½ cup fresh lemon juice from 1-2 lemons
  • ¼ cup olive oil
  • 1 teaspoon dried oregano
  • 1½ teaspoons salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 2 garlic cloves, minced

Instructions

  1. Add the chicken:
Place the chicken breasts in the center of your slow cooker.
  2. Arrange the vegetables:
Place the green beans on one side and the diced red potatoes on the other, keeping them separated from the chicken as much as possible.
  3. Make the dressing:
In a medium bowl, whisk together the fresh lemon juice, olive oil, oregano, salt, black pepper, onion powder, and minced garlic.
  4. Pour it over everything:
Pour the lemon garlic dressing evenly over the chicken, green beans, and potatoes.
  5. Slow cook:
    Cover and cook on:
    • High for 4 hours
    • Low for 7 hours
  6. Leave the lid closed:
Try not to lift the lid during cooking. Keeping the slow cooker closed helps maintain the temperature and ensures everything cooks evenly.

One Important Tip: Use Fresh Lemon Juice

Fresh lemon juice really makes a difference in this recipe.

Bottled lemon juice can have a sharper, more processed flavor and may change the final taste of the dish.

Using freshly squeezed lemon keeps the dressing bright and gives the chicken and vegetables a cleaner, fresher flavor.

A Simple Meal Prep Option

This is the kind of recipe that works especially well when you want to prepare several meals at once.

Once everything is cooked, divide the chicken, potatoes, and green beans into individual containers for quick lunches or dinners throughout the week.

You can also adjust the portions depending on your needs by adding more vegetables or changing the amount of potatoes you serve with each meal.

Simple meals like this can make consistency much easier because the decision about what to eat has already been made.

Healthy Eating Doesn't Have to Be Complicated

Healthy meals don't always need elaborate recipes or hours in the kitchen.

Sometimes the best approach is keeping things simple: a good source of protein, vegetables, a satisfying carbohydrate, and flavors you actually enjoy.

That's exactly what this meal delivers.

🍋 Simple ingredients. Easy preparation. One complete meal.
