
Slow Cooker high protein Pot Roast Beef Stroganoff

Ingredients
- Chuck roast 4-5lbs
- 1-2 tbsp oil
- Salt 1.5 teaspoons and pepper 1 teaspoon
- 1 onion, chopped
- Mushrooms, sliced 1 cup
- Garlic, minced 2 teaspoons
- Beef broth 2 cups
- Dijon mustard 1tsp
- Worcestershire sauce 1.5 tablespoons
- Thyme 1 teaspoon
- Paprika 1 teaspoon
- Greek yogurt 3/4 cup
- Barilla protein noodles
Instructions
1. Brown the Meat
- Heat oil in a large skillet over high heat.
- Season the chuck roast generously with salt and pepper.
- Sear on all sides until browned, about 4-5 minutes per side.
2. Transfer to the Slow Cooker
- Place the browned roast into the slow cooker.
- Add the chopped onion, sliced mushrooms, and minced garlic around the roast.
3. Make the Sauce
- In a bowl, whisk together:
- Beef broth
- Dijon mustard
- Worcestershire sauce
- Thyme
- Paprika
- Pour the sauce over the roast and vegetables.
4. Cook
- Cook on Low for 8 hours or High for 4 hours, until the beef is fork-tender.
5. Shred the Beef
- Remove the roast and shred it into large pieces using two forks. Discard fat to make meal lean.
6. Cook the Noodles
- Boil the Barilla according to the package directions, but cook them 1-2 minutes less than directed so they stay slightly firm.
7. Finish the Stroganoff
- Stir the greek yogurt into the sauce in the slow cooker until smooth.
- Add the cooked noodles and stir to coat them in the sauce.
- Return the shredded beef to the slow cooker.
- Cook on High for 15 minutes to allow everything to heat through and the flavors to come together.
Serve hot, garnished with fresh parsley and Greek yogurt if desired. It's especially delicious with a side of green salad or broccoli .
