- ½ cup diced pickles

Directions
- Preheat the oven to 375°F and lightly spray a 12-cup muffin pan with nonstick cooking spray.
- Heat a skillet over medium-high heat. Add the ground beef, onion, garlic powder, salt, and pepper.
- Sauté until the beef is browned and completely cooked through.
- Transfer the cooked beef and onions to a large mixing bowl.
- Add the cottage cheese, ½ cup shredded Mexican cheese, diced pickles, cherry tomatoes, and liquid egg whites.
- Mix everything together until evenly combined.
- Divide the mixture evenly between all 12 muffin cups.
- Sprinkle the remaining ½ cup shredded Mexican cheese over the tops.
